Wor Wonton Soup recipe

I crave a lot of food in America that sometimes I can’t find here in Tokyo.  So I decided I would try and make one of my favorites, Wor Wonton Soup.  Wor in Chinese means everything, so they literally put anything in this soup.

Wor Wonton Soup

Ingredients for Wontons

  • 170 grams of ground pork
  • medium shrimp, shelled and deveined 
  • teaspoon of brown sugar
  • tablespoon rice wine or sake
  • tablespoon soy sauce
  • teaspoon finely chopped scallions
  • teaspoon finely chopped ginger
  • 24 square wonton wrappers

Ingredients for Soup

  • cups  of chicken broth (about 1400ml) 
  • 1 chicken breast, cut into cubes (you can add more chicken if you like)
  • 450 grams of medium shrimp, deveined with tails off
  • 1 package of mushrooms, sliced
  • teaspoon brown sugar
  • tablespoon rice wine or sake
  • tablespoon soy sauce
  • teaspoon finely chopped fresh ginger (tube ginger is okay too )

Variations to Add to Soup

  • 1  can water chestnuts
  • cup fresh spinach, torn into small pieces
  • teaspoon finely chopped scallions
  • 1/2 cup of peapods

Directions for Wonton

  • Finely chop the shrimp into small piece.

  • In a small bowl, hand mix the pork, shrimp, brown sugar, rice wine or sake, soy sauce, scallions and chopped ginger.

  • Mix the ingredients well and set aside in the refrigerator for about 30 minutes.

  • Place about 1 tsp of the filling in the center of each wonton wrapper.
    This doesn’t need to be precise, but too much filing makes it harder to close.

  • Turn the wonton to look like a diamond. Wet the edges of each wonton wrapper with a little water. Add extra water above the filling.

  • Fold the top half to the lower half, and press them together with your fingers to seal it shut.

  • Take the ends of the wonton and press them together to form what looks like a tortellini.

  • After making the wontons, set aside while we prepare the soup.

Directions for Soup

  • Bring chicken broth to a boil, then add chicken and shrimp. Wait until they are completely cooked.
  • Next add all the rest of the ingredients for soup.
  • Finally add the wontons to the boiling chicken stock and cook for about 5 minutes. They will shrivel up.
  • Once the wontons are cooked, the soup is ready to serve.
